Yoghurt Herb Dressing

Yoghurt dressings are cool and fresh and have a rich creaminess which acts as a backdrop for other flavours. The herbs can vary according to what you have to hand but my favourites are dill, basil, chives, mint or flat-leaf parsley.

To prepare the Yoghurt Herb Dressing
Mix the first seven ingredients together and finish by whisking in the olive oil. Dress the salad until lightly coated. You can always add more, but don’t overdress the salad in the first instance.

Serves 4
1 tsp Dijon mustard
75ml Greek yoghurt
2 tsp white wine vinegar
pinch salt
2 tbsp cold water
1 tbsp flat leafed parsley,
finely chopped
1 shallot, finely chopped
4 tbsp extra virgin olive oil
