Experiment with vegetables that you think have good ‘mopping-up’ powers like mushrooms, broccoli, or Napa cabbage. With minimal effort and maximum flavour, it’s a simple dish that packs a punch. To prepare the Chicken Teriyaki Noodles

Marinate the Chicken
Mix the soy sauce, sake, mirin, and sugar together. Marinate the chicken in the sauce for at least 15 minutes. Remove the chicken from the marinade and pat dry before frying, saving any excess marinade to create the sauce.

Cook the Chicken
Bring a wok or frying pan to medium heat and add a dash of oil. Sauté the marinated slices of chicken breast until golden brown and cooked through, about 2-3 minutes. Remove into a bowl. Wipe out the wok or frying pan, return to a medium heat, and add a few knobs of unsalted butter. Add the sliced mushrooms and sauté for a few minutes to caramelise slightly. Add the leftover marinade to the pan and bring to a simmer.

Add the Noodles
Add the udon noodles, stirring gently to loosen them up. Try not to break the strands! The noodles will soften as they warm up in the teriyaki sauce.

Finish the Flavour
Taste and adjust the balance with a little more soy sauce or a pinch more sugar. Return the chicken to the pan and mix with the noodles and mushrooms to heat through. Add the sliced scallions at the very end and serve in deep bowls while piping hot with a sprinkling of sesame seeds.

Tip! An addictive bonus is to have some chilli oil on the table so that everyone can add a little heat to their noodles if they’re craving a little spice in life!

  • 4 tbsp light or thin soy sauce
  • 2 tbsp sake
  • 2 tbsp mirin
  • 1 tbsp caster sugar
  • 1 chicken breast, skin removed, finely sliced
  • 60g mushrooms, ideally shiitakes, finely sliced
  • 200g packaged udon noodles
  • 2 scallions, finely sliced at an angle
  • Sesame seeds, to garnish
  • Neutral oil, to cook
  • A few knobs of unsalted butter, to cook
  • Chilli oil, to serve (optional)
