Recipe for Butter Cookies

Ingredients:

  • 225g salted butter at room temperature
  • 150g sugar
  • 1 egg yolk
  • 1 tsp vanilla extract (or 1/2 tsp grated orange or lemon rind)
  • 270g flour

Instructions:

  1. Cream the Butter:
  • Cream the butter until light and fluffy.
  • Add the sugar and beat until fluffy again.
  1. Add the Egg Yolk:
  • Add the egg yolk and beat until light again.
  1. Incorporate the Flour:
  • Work in the flour (and the salt if needed) until just evenly mixed.
  1. Shape the Dough:
  • Place the dough on a sheet of cling film and shape into rolls of any size you like.
  • Chill the dough.
  1. Slice and Bake:
  • Slice a scant 1/4" thick pieces.
  • Place on a baking sheet lined with parchment paper, at least 1 and half inches apart.
  • Bake in a preheated oven at 180°C (350°F) for 10-12 minutes, depending on size, or until they are very lightly browned on top.
